For the most part you will probably be taking your kids to Orlando with you. This means that you will probably be going during a school vacation of some sort. Be aware, though, that the couple weeks around Christmas when the kids are out of school are some of the busiest weeks in Orlando. If you wait a couple more weeks until the end of January the crowds are much smaller. The last time I was in Orlando was the last week of January. We never had to wait for more than 5 or 10 minutes for any of the rides in any of the parks. The weather was also great with near record highs of around 80 degrees and low humidity. This isn't the norm though.

Most families that go to Orlando in summer go in June right after the kids get out of school. If you wait until August the crowds are much smaller and prices are usually cheaper also. The weather at that time will be hot and humid though.
What tickets will I need?The best values in theme park tickets are the multiple day passes. The Disney Park Hopper Plus pass is a great value and will allow you to visit all of the Walt Disney World parks and attractions. Another (and maybe better) option is the Orlando Flex ticket which gives you admission to Universal Studios, Islands of Adventure, SeaWorld, Busch Gardens, and Wet 'n' Wild and is the best value you will find for the Orlando theme parks.
